Our artisan pasta is hand-made with great care by Antonio Marella, in the heart of Puglia in the province of Bari in the "heel" of Italy. This family-oriented artisanal factory uses dough made of hard wheat (durum) that is locally grown for both their white pasta and colorful pasta. A careful selection of these ancient and heirloom grains ensure a high-quality product that is rich with proteins and flavor. Pasta Marella's colorful rainbow pastas or "arcobaleno", are made with dehydrated natural dyes from spinach, tomatoes, red beets, turmeric, and red pepper. Pasta produced at the "Pastificio Marella", are extruded through bronze dies, giving the pasta a rough texture to better hold sauce. The pasta is dried at a low temperature for three to four days, creating a uniquely flavored pasta that expands when cooked. Delicious with a simple traditional sauce such as tomato and basil, or an oil based sauce to bring out the colours of the beautiful pasta ribbons.
